2006 Harvest
2006 harvest, is very promising, the grenaches are superb so much with this expression required of raspberry and cocoa. Syrah grenache (Baillif and templier) developpe on this millesim of splendid flavours of eucalyptus.

A family Field, wines of soil! The Field is not only strong of
encépagement qualitative but also of a soil of character. Although
out of Local wine, the Field chooses local type of vines which
perspire the heart of our area and in which the consumer will find a
little our guarrigues or of our sun.

TESTS OF THE SCIENTISTS
This wine contains 4939 mg/l total polyphenols of which
monomeric: 35,9 % and oligomers: 16,6 %
OPINION OF THE WINE WAITERS
Sharp and luminous, the dress is avoided of a garnet fairly
constant violine sparks. Luxuriant and cordial the bouquet reveals
scents of ripe trés red small fruits (cutter, morello cherry), of
rosemary, iris, of new leather and liquorice. After a full and well
framed attack, it becomes more gouleyant to let appear the small
stone-fruits (one there finds the morello cherry), spices (curry, pepper)
and flint in the final one. A pretty success to be tasted in the 3 years on côtelletes of lamb to grasses.

The Scrubland 2001, LOCAL WINE Of OC, RED (4,60 €)
The wines of this field are vinified by a woman who almost excuses
herself to produce only wines that she likes. It would not have,
because this wine rained us much by his whole character, which
completely respects (and much more than considerable AOC) the proverb
according to which a good wine must have a taste which evokes its
place of origin. A superb business at this price!
Wrap rather dense. The nose is trés particular, because it intrigues
by its fume and mineral notes. That plank even tar, in any case
liquorice. But it is the nature of the grape which is expressed here,
because this wine does not see wood. The mouth appears with strength
and a beautiful natural freshness. Its savours breathe the South, and
it bears its name well. In spite of its well affirmed character, it
does not give any impression of excés because its freshness maintains
it in balance.
Agreements with raised mets, like a beef stew to olives or a game.

Le Bailli cuvee 2000,
from la Commanderie de Preïssan,
A local red wine from the Languedoc region. Le Bailli is a blend of grenache grapes chosen for their suppleness and syrah grapes chosen for their spices. It has a very intense hot garrigue bouquet.

A family-run winery producing local wines ! Among this Winerys major assets are quality vine stock and exceptional soil. Even though it only produces Vin de Pays, the Winery has chosen to use local grape varieties which reflect the soul of its region and in which the consumer will taste a bit of the garrigue and sunshine.

WINE CELLARERS OPINION
Beautiful bright red color that is crystal clear and full of light. The bouquet is a real delicacy beginning with hints of small, very ripe red and pink fruit and changing into a scent of new leather, gun flint, cassis buds and menthol. Its exquisite roundness on the palate bursts with the taste of prunes, blueberries, peonies, flint and rosemary. The remarkable finish is supple with a bit of licorice. The wine is already at its peak (and will stay there for a little while). We would enjoy drinking it with wild hare spiced with savory.

Preïssan
Sophie Gély has a big program ahead of her. In addition to her job as a pharmacist and with a baby on the way she has decided to take over the family vineyards. She started off producing two cuvees of Vin de Pays d'Oc where she applied all her know-how as an oenologist. The wines are round, supple and highlight their very ripe red fruit bouquet. The 99 vintages are ready to drink and will go well with fall dishes.

The recipe
DRIED FRUIT MENDIANT DESSERT
Ingredients
100 g pitted prunes
100 g soft, dried apricots
100 g dried figs
25 g yellow grapes, aka Corinthe grapes
25 g purple grapes, aka Smyrne grapes
1 small apple
2 tbsp. honey
Preparation
Bring the honey to a boil in a pan. Peel the apple, cut it into small pieces and add it to the honey. Let it cook for 5 minutes. Stir with a wooden spoon. Pour in 1/2 a glass of water. Cook another 3 to 4 minutes. Mix the dried fruit together in a salad bowl. Pour the honeyed applesauce into a food processor and blend into a thin liquid, then pour over the dried fruit. Stir. Let the mixture cool, cover it and put it in the refrigerator.
Allow the mixture to steep for 24 hours if possible. Serve with vanilla, rum/raisin or dark chocolate ice cream.
Note : this mixture may be kept for a few days in the refrigerator.
Wine tips
... a generous, full-bodied wine should be served with it.
This is getting a bit farther away from the Pyrénées, but weve found its sometimes good to mix regions. The great wine at La Commanderie de Preïssan is L'Esprit de la Garrigue 2001. It is a Pays d'Oc wine, made from very concentrated, pure Grenache grapes. The taste wraps itself around the fairly strong texture of the cheese while adding its somewhat kirsch-scented bouquet with hints of jam.
